We all know that George has issues with holding down a job or, to be honest, doing anything that would make him a fully functioning human and mature adult. One of the funniest things about Seinfeld is the way in which the characters seem utterly, blissfully unaware of just how annoying, exrating, and egotistical they are. That is definitely true of both George and Elaine, who seem to float through the world without even a trace of self-awareness.
One can just imagine, then, how this would have manifested in their relationship, and the fireworks caused by their dueling egos would have been worth watching in itself. Sometimes, each part of a couple brings some strength to the table, each of them complementing the other.
In other cases, each partner is so bad that each one cancels the other out. This would most likely have been the case had George and Elaine got together, as each of them could be, to put things mildly, incredibly unpleasant.
It would have been quite fun to see how their negative characteristics would have negated one another. One of the key things that kept both George and Elaine from staying in any sort of long term relationship is their inability to overcome their fundamentally shallow natures.

This suggests that, beneath the surface, they actually have a lot in common with one another, enough so that, just perhaps, they might have made the perfect couple.
Say what you will about Elaine but she, along with Jerry, is a genuinely smart person.
